We try to keep our meals at the cabin pretty simple. We often end up grilling meat (and some veggies for me) and adding a salad.
Sunday night we made burgers and veggie burgers with couscous salad on the side. I used israelian couscous and added some roasted zuchini, fresh kale and tomatoes and a shallot. I finished it with some canola oil, red wine vinegar and some honey, salt and pepper ( all items we had at the cabin). I never measure anything unless I’m baking so forgive no measurements. We love salads, you cannot go wrong bo matter what veggies you include.
