This is a great way to use up whatever is in the fridge and fill up those bellies before the day on the slope. I planned ahead and had some leftover brown rice from the previous night’s dinner (fried rice as we learned to make it in Bali). I also had some baked ham from the previous weekend. I cooked some sweet potatoes the night before and just used whatever other veggies and cheese and vegan cheese we had on hand. Everyone’s burrito ended up being different based on their preference. By the way, the salsa in the picture is from my brother’s in-laws. It’s leftover from Christmas. It’s so delicious but also so spicy that you literally only use 2 spoons a week. This weekend was the last weekend of the salsa. Sad face.
